Vegetable Stir-fry aka The Detox Meal after the Superbowl

If you’re like me, you’re still reeling from all the junk you ate on Superbowl Sunday. Yup. Gross. Burgers, hot dogs, potato salad, coleslaw, soda, cookies, pretzels, and a few more things that as I’m typing this is slowly making my mouth water. Wait, what??? I’m such a glutton.

The fact is, I love food. I’m obsessed with it. Luckily after days like Sunday I crave veggies and fruits and salads and not more burgers, fried food, and junk. I’m generally a healthy eater, as is evidenced by the majority of my recipes, and after a splurge day like I had on Sunday I NEED something healthy.

I had just received my shipment from Annie’s which was chock full of stir fry veggies so I threw it all together over some rice and voila—Asian veggie stir fry!

Make this. Your body with thank you. It’s filling. You protein Nazis: it has more than enough with the beans and the veggies. Trust me, you will survive without meat. 🙂

I used what veggies I had on hand. In reality can you throw in whatever you have in your fridge.

Here’s what you need:

1 can garbanzos, rinsed

1 zucchini, slice

1 yellow squash, sliced

3 garlic cloves, chopped

1 stalk of broccoli, cut into florets

1 tbsp fresh ginger, chopped

5-7 mushrooms, sliced

2 scallions, cut roughly into 3 pieces

1 small onion, sliced

1/2 red bell pepper, cut roughly into small pieces

2 baby bok choy, rinsed and stalks trimmed

1 handful or so of bean sprouts

2-3 tbsp of oyster sauce

4-5 tbsp of soy sauce (or to taste)

2 tbsp of sesame oil

salt/pepper/sesame seeds/sriracha (optional)

Here’s what you do:

Chop all your vegetables so everything is prepped and ready to go. It will make it much easier.

In a large saute pan, heat up some sesame oil over medium heat. Saute onion, garlic, and ginger for a minute or two. Add about a 1/2 cup of water and add the broccoli and red pepper and cook for an additional 3 or 4 minutes covered. Add the soy sauce and oyster sauce.

Next, toss in the squash and zucchini. Mix to combine the veggies. Cook for about 5 minutes or until it begins to become tender. Add the bok choy. Taste a piece of broccoli and see if there is enough flavor. If not, add some more soy sauce and oyster sauce.

Lastly, add the mushrooms, scallions, and bean sprouts. Mix to combine all together. Cook for around another 3-5 minutes. Serve over rice (optional). Season with salt/pepper if needed and with sriracha if you like it hot!
