Orecchiette con broccoli

I am definitely on a pasta kick. This takes about 20-30 minutes to make, is healthy, is extremely flavorful due to the pungent garlic and sharp parmigiano cheese. And it uses De Cecco pasta! Sounds pretty perfect, if I must say so. If you don’t know about De Cecco, check out my last post where I talk a bit about it. It’s worth the extra money, perhaps not for every single pasta meal you make, but definitely if you’re looking to impress someone or just treat yourself.

This requires only 5 ingredients, and the pasta is one of them! So easy. Make sure you put a lot, a lot, a lot of parmesan cheese because that’s what makes this so yummy.  The orecchiette (which means little ears) are the perfect pasta shape because the broccoli gets stuck in the dome. This dish hails from the Puglia region of Italy and is often used with broccoli rabe and sausage. This the vegetarian version, but feel free to throw in some sausage if you desire.

Here’s what you need:

1/2 box of De Cecco orecchiette

1 head of broccoli, cut into florets and 1 of the stalks cut into slivers (if you want)

3-4 cloves of garlic, chopped

1tsp of red pepper flakes

1 cup (or more) of freshly grated parmesan cheese. Please use the real stuff, your mouth will thank you.

Here’s what you do:

Blanch the florets and stalk slivers. Drain and set aside.

Boil your pasta according to the directions. Make sure you heavily salt the water.

In a pan over medium heat saute the garlic in some evoo for a few minutes.  Toss in the broccoli, season with  (light) salt/pepper/red pepper flakes. Cook for about 5 minutes or until the broccoli is tender, but not mushy. The broccoli tends to soak up the olive oil so you might need to add a little more oil than you usually do. Drain the pasta and combine with the broccoli. Add the parmesan-the more the better 🙂

Add more salt and/or red pepper flakes if needed.
