Baked scallop in a shell (what??), butternut squash mash, avocado salad

Publix is wonderful place, my friends. Their slogan is “where shopping is a pleasure” and as cheesy as it sounds, it’s really very true. The seafood department, however, leaves something to be desired. Most of the seafood is farm raised and most of the time doesn’t look very fresh to me. Buuuut they have these nifty little stuffed clams and stuffed scallops. And even better–sometimes they have them on sale for one dollar!! Yes, one dollar! I mean, come on, really, that’s just absurd. So being the broke school teacher that I am I always stock up and freeze them! They look super fancy and they’re so delicious! I made a recipe previously that has the stuffed clams in it. This meal requires nothing but an oven.  Everything goes in the oven and you can park yourself in front of the TV and dinner will be ready in 30-40 minutes without you having to do a thing! How great is that?!

The scallops bake for about 15-18 minutes. The squash bakes for about 30 minutes. And the avocado, well that you just cut up and serve. If you’re a klutz in the kitchen you can make this. I promise. And if you somehow manage to screw it up, well, there’s always next time.

Here’s what you need:


stuffed scallops from Publix (I baked two–one for dinner and one for lunch tomorrow)

1 butternut squash, halved and seeds scooped out

1 Hass avocado

a few slivers of onion

olive oil/white vinegar/salt/pepper

1 tbsp. butter

splash of milk

Here’s what you do:

Start the squash first because it will take the longest. Follow the same instructions for the spaghetti squash. When it’s done mash it with a potato masher, add a splash of milk, salt/pepper, and I put some paprika on top just to make it look puuuuurdy.

Bake the stuffed scallops according to the directions on the label.

For the avocado, slice up about 10 slivers of onion, cut the avocado into cubes (look here if you don’t know how to do that), and season with olive oil, white vinegar, salt, and pepper!

Voila! Very easy and requires very little time in the kitchen.

    I’m going to try this tomorrow. Have a furlough day which gives me plenty of time to pick the items for cooking. Can’t wait till dinner tomorrow!

      Ok, good! Let me know how it turns out! I like a lot of vinegar on the avocado, but that’s just me! 🙂 and everything else is just so easy to make!
