Greek garbanzo bean salad

Last night was vino night with the girls! A lot of wine and a few snacks were on the menu…. In order to avoid the frozen, pre-packaged food aisle at the supermarket I decided to make an easy garbanzo bean salad that’s healthy, low fat, and very tasty! It was a hit! This is great as a side dish, snack, or even as a light lunch! It’s great for the spring/summer as it is served cold and only takes about 15 minutes to prepare. You can pack it in a cooler (with a few beers of course) and take it along to the beach which is exactly what I think I’ll do! 🙂

Here’s what you need:

2 cans of garbanzos, drained and rinsed

1 cucumber, peeled and chopped

1 large tomato, chopped

1/2 red onion, sliced

1 small can of black olives, pitted

juice of 1 lemon

feta cheese (however much you want)

1 clove of garlic, smash it into a paste

a few tablespoons of greek dressing

salt/pepper

Here’s what you do:

Combine it all together! Really difficult 😉

    I had one can of garbanzos in the pantry and all the other ingredients on hand. It was easy to make and take to a last minute invitation and much better than a similar recipe I had in a cookbook. Thanks.

    This sounds great. I may try this myself. I prefer to soak my garbanzos overnight and boil them rather than buying the somewhat too soft ones in the can and I would add some fresh herb like parsley to brighten up the flavor (or a bit of cumin and some cilantro). Keep these recipes coming!!!
